Garlic Lovers: Harvest & Cook Tender Garlic Scapes Now
Garlic lovers, rejoice! The tender green shoots, known as garlic scapes, that emerge from hard necked garlic plants are not only edible but also play a crucial role in garlic bulb production.
Garlic scapes are the first tender green shoots that appear on garlic plants, terminating in a bud-like structure. They are a natural part of the garlic growth cycle and require no additional care. These shoots can be harvested using just scissors or by pinching them off at the base of the plant. Cutting them off encourages the plant to focus its energy on underground bulb production.
In the kitchen, garlic scapes can be used just like chives, adding a delicate garlic flavor to salads, soups, and sauces. They can also be used in various dishes such as stews, pasta, or even made into pesto. Their versatility makes them a welcome addition to any meal. To store, simply place them in a glass of water or a zip top bag in the refrigerator for several days.
If left to grow, garlic scapes will flower and produce bulbils that can be planted to grow garlic in three to four years. However, for a more immediate harvest, garlic cloves should be harvested when the lower leaves of the plant start to turn brown but the upper leaves are still green, typically in mid to late summer.
Harvesting garlic scapes not only provides a delicious ingredient but also boosts garlic bulb production. With their delicate garlic flavor and versatility in the kitchen, garlic scapes are a welcome addition to any garden and meal plan.
