Habeker Hof in Haar Embraces Sustainable Farming and Unique Produce

In the picturesque town of Haar, near Munich, lies Habeker Hof, a farm that has been in the Habeker family for three generations. Run by Antonia and Roland Habeker, the farm has transformed its former stable into a beautiful farm shop two years ago.

The farm's focus is on sustainability and the extraordinary. Habeker Hof does not use chemical pesticides, instead relying on beneficial insects to maintain a balance in their crops. This approach is appreciated by customers who frequent the farm shop, drawn by its commitment to a healthier environment.

Antonia Habeker, the farm's manager, specializes in old, open-pollinated varieties of tomatoes in her greenhouse. During the fall season, the farm grows an impressive 115 varieties of pumpkins, some of which have edible skin, as Antonia assures. The farm shop offers a variety of produce, including tomatoes, saffron (grown on the farm), oils, sauces, pumpkin seeds, and bread made from the Haar region's ancient Eglfinger Zimbern grain, which tastes nuttier and is more digestible than regular wheat flour.

The farm shop also sells homemade items such as tomato sauce and pumpkin soup. Customers come from far and wide to buy the Habekers' produce, making the farm shop a popular destination.

Habeker Hof's produce is used by three-star chef Tohru Nakamura, and the farm is a training centre for sustainable cooking in Munich, launched to support kitchen teams and promote the use of regional organic foods in out-of-home catering. Silke Brugger, who leads the Haus der Kost, aims to increase the use of regional organic foods in out-of-home catering.

The Department of Climate and Environmental Protection is responsible for Munich's food transition and aims to make public catering more sustainable.
